My latest Small Bites creation was inspired by fruits and vegetables available during the late summer harvest. Juicy peaches, ripe summer tomatoes and perfectly tart blueberries come together with a little arugula, mozzarella and olive oil. I made this salad with my mom and sister Sarah. The recipe was inspired by one we saw in Sunset Magazine. They showcased a salad using tomatoes and peaches and we thought that sounded so good. We happened to also have a lot of blueberries on hand and decided we had the ingredients for something special. Since everything is currently in season, the flavors really come from the fresh produce.
Much like a Caprese salad, you start with a delicious layer of tomatoes and then layer your ingredients on top. In a Caprese salad you have tomatoes, mozzarella and basil, but here we’ve added peaches and blueberries and used arugula instead of basil. You can serve on a large platter or plate each salad individually. Below is the basic how to, just buy enough of each ingredient so that each guest gets a few slices of tomato and peaches—the stars of this salad.
Ingredients
- Tomatoes, sliced and salted
- Peaches, sliced thinly
- Blueberries
- Mozzarella
- Arugula (a small handful for each salad)
- Olive Oil
- Balsamic Vinegar
- Or use your favorite Italian Dressing in place of the olive oil and balsamic vinegar
Directions
In small bowl dress your arugula with a small amount of olive oil and balsamic vinegar. On a salad plate, place a few slices of tomato and salt the tomatoes. Then on top of the tomatoes place a small small amount of the dressed arugula. On top of the arugula add your peach slices. Sprinkle with blueberries and then top with a few slices of mozzarella. We then finished the salad with another drizzle of olive oil on top and a sprinkle of salt and pepper.
